Throughout his career, Peter has not only established and headed several successful restaurants, but has also been engaged by many highly regarded establishments for all manner of restaurant, food and beverage consulting.

Peter is well known for establishing Sydney’s iconic Flying Fish Restaurant & Bar which he opened in 2004, and successfully led the kitchen team as Executive Chef for 8 years.

In 2008, Peter’s love of the Pacific and passion for seafood led to the opening and continued success of Flying Fish Fiji, which was Fiji’s premier dining destination for over 10 years.

In 2013, Peter opened Noosa Beach House on vibrant Hastings Street. With stunning produce and seafood from the Sunshine Coast, the menu was infused with his signature Sri Lankan spice flavours. After 8 successful years as an award-winning Noosa favourite, Peter is leaving the helm of Noosa Beach House to open a new venue locally in 2021
