Peter was engaged to set up the food & beverage operations for the re-opening of this iconic colonial hotel.

Featuring a fine dining restaurant, Peter combined the flavours and produce of the South Pacific with a fresh modern approach.

Peter also created and implemented menus and operational systems for the buffet breakfast, pool bar, club lounge, lobby lounge, and in-room dining.
