Sheraton Resort, Tokoriki Island
Peter established the food and beverage operations for the opening of the resort in 2014, working within the strategic difficulties of a remote location.
The resort’s five food outlets included the premier restaurant ‘Flying Fish Tokoriki by Peter Kuruvita’, featuring his signature dishes and menus. He placed and trained key staff, as well as creating the menus and systems across the resort to assist the future success of the business.
