2004-2012

Well- known for establishing this iconic Sydney Harbour restaurant on a heritage Wharf in Pyrmont, Peter successfully led the kitchen team as its first executive chef for 8 years from 2004 to 2012.

Peter was responsible for creating menus, hiring staff, implementing ordering and prep systems across the bar and main restaurant, as well as co-ordinating the main kitchen, along with the sushi and pastry kitchens.

Bringing his Sri Lankan influence to the menu, the Flying Fish mud crab with black pepper and curry leaves was a particular favourite with patrons.
