RECIPE

A mallum is a warm coconut and vegetable salad which is included in almost every meal in Sri Lanka. It usually consists of grated coconut and green leafy vegetables or herbs plus anything from banana blossom to green jackfruit. Get creative!

Ingredients

1 bunch flat-leaf (Italian) parsley,
leaves picked and finely chopped
(or kale, asian greens…)
½ small onion, finely chopped

1 small green chilli, finely chopped

25g Hello Pure desiccated coconut
(rehydrate with 75 ml hot water)
or 50 g freshly grated coconut

½ teaspoon ground Maldive fish flakes

(Dried fish available in Asian supermarkets)

¼ teaspoon ground turmeric
Juice of ½ lime

Method

Place all the ingredients except the lime juice in a saucepan and stir over medium heat for 4 minutes or until just warm.
It is important to keep the bright green colour in the leafy ingredients.

Remove from the heat, stir in the lime juice and season to taste with salt.
