Every year I look forward to judging the Dilmah High Tea Challenge. The event promotes the use of tea in gastronomy. In the past contestants have prepared some of the most incredible dishes I’ve ever had the pleasure to try. The competition highlights the diversity and beauty of tea.

The competition is open to professional teams from hotels, resorts, restaurants and culinary schools. I’ve had the honour to judge alongside Bernd Uber and Dilhan C Fernando for the past several years, in many parts of the world. The consistently excellent level of presentation, creativity, skill and culinary art I see is exciting – there are so many talented food lovers out there, I hope you will all enter.
