The Circle – Feb 29, 2012

I had the pleasure of being invited to cook a dish on Channel 10’s “The Circle” in February.

I chose one of our signature dishes at Flying Fish Restaurant & Bar – Seared yellow fin tuna with ruby red grapefruit, sweet crackling pork & black pepper caramel

This dish has been on the menu since we opened in 2003, and I wouldn’t dare change it – it is still the most popular menu choice.
