Secret ingredient of the Flying Fish fat chips. Seriously addictive and craved by Peter’s restaurant customers – his Chilli Salt takes the humble chip to another level. Ideal for sprinkling over all types of roasted vegetables, chips & popcorn. Yummy sprinkled over eggs.

Chilli salt Chips


1 jar Peter Kuruvita Chilli salt

1kg large Desiree potatoes

Vegetable oil for deep-frying


  1. Peel the potatoes and cut lengthwise into large chips.
  2. Cook them in oil at 135C, cooking through without colouring for 7 minutes.
  3. Drain well. Raise the temperature of the oil to 180C and fry a second time until golden.
  4. Drain, toss in a large bowl with a spoonful of the chilli salt and serve hot. Store remaining chilli salt in an airtight container
