When designing the menu for Infinity Pacific I wanted to capture the soul of Australia through its flavours.
Using iconic, fresh ingredients and a palate of tastes that speak to the heritage of cuisine in our country as well as my signature favourites, I’ve included dishes such as Sri Lankan Snapper Curry and Seared Yellow Fin Tuna with Ruby Grapefruit, Sweet Pork and Crackling on the extensive menu.
