The inaugural South Pacific Food & Wine Festival held on Denarau Island in March was a huge success and highlighted a keen interest in fine food amongst the chefs, locals and tourists of the Pacific. I was joined by an array of international chefs such as Manu Fieldel, Ben O’Donahue, Michael Meredith, Peter Gordon, Robert Oliver & more, for 3 days of Masterclasses, Industry talks, and Signature dinners. The Festival ended with an amazing Gala Degustation Dinner for 130 people, cooked by all of the above. The local Fijian chefs and waitstaff showed that they are more than capable of supporting such an event and were so appreciative of being exposed to these experiences. This is a great step forward for the Fijian hospitality industry. Running a restaurant at the Sheraton Resort Denarau, Flying Fish Fiji, it is truly exciting.
