Seafood is an important part of my life, cooking it is what I have become known for and sustainable seafood is something I am passionate about. Sea Flavour is a unique event that brings together chefs like myself with a commitment to seafood, restaurants, the dive community, ocean charities and protection agencies for a fun day of raising awareness and relaxing at Sydney’s Bare Island. In this two hour hands on class Peter will guide you through selecting, filleting and cooking great seafood and demonstrate three different cooking techniques for perfect results.

GOURMET SAFARI at FLYING FISH RESTAURANT – Jones Bay Wharf, 19-21 Pirrama Rd, Pyrmont
Join myself and Maeve O’Mara as I cook a feast from my family recipes and explain how Sri Lankan food is so unique and delicious – expect 20 or so dishes including homemade chutneys and sambals. Start with a glass of bubbles on the beautiful deck that overlooks the harbour then move into the restaurant for a spicy feast with matched wines from Wine Selectors.

I will be demonstrating dishes from my SBS My Sri Lanka series with “Sri Lankan prawn curry with Prawn & Sweet Potato Rolls, Condiments and Basmati rice” followed by a Thai demonstration by David Thompson in the Sunday Morning Session
